What It Is
Section titled “What It Is”Mushrooms from Cold Springs Organics are cultivated varieties — typically oyster or shiitake — harvested fresh and appearing in the box when conditions are right. Earthy and rich, they benefit from high-heat cooking to develop deep flavour.

Section titled “How to Store It”- Refrigerate in a paper bag or open container — moisture is the enemy.
- Never store in a sealed plastic bag.
- Use within 3–5 days. If they feel slightly dry on the surface, they are still good; if slimy, discard.
How to Prep It
Section titled “How to Prep It”Do not rinse under water — wipe with a damp cloth or dry brush to remove debris. Trim the base of the stem. Tear or slice depending on size and recipe.
How to Cook It
Section titled “How to Cook It”- Sautéed — cook in a single layer in a hot dry pan with butter until deeply golden; add garlic and thyme at the end.
- Roasted — toss with oil and salt; roast at 425°F for 15–20 minutes until caramelized.
- Broth — simmer stems and trimmings in water for a rich mushroom stock.
Quick Meal Idea
Section titled “Quick Meal Idea”Mushroom toast — sauté mushrooms until golden, season with garlic, thyme, and a splash of cream; pile onto thick toast and top with a fried egg.
