Ground Cherries

Ground cherries are a unique summer crop at Cold Springs Organics — small golden fruits wrapped in papery husks, related to tomatillos and native to the Americas. Sweet, fruity, and slightly floral, they’re unlike anything else in the box and beloved by those who discover them.

  • Ground cherries keep exceptionally well in their husks at room temperature for several weeks.
  • Husked ground cherries should be refrigerated and used within a week.

Peel back and remove the papery husk — it’s not edible. Rinse the small fruits inside. No other prep required. They can be eaten whole.

  • Raw snack — pop them straight from the husk.
  • Jam or preserves — simmer with sugar and lemon for a golden jam that tastes like pineapple-vanilla.
  • Salsa — chop with jalapeño, cilantro, and lime as you would a tomatillo salsa.
  • Baked — fold into muffins, crisps, or tarts in place of blueberries.

Ground cherry salsa verde — roughly chop husked ground cherries with jalapeño, cilantro, onion, and lime juice; serve with chips or spooned over grilled chicken or fish.
