Cold Springs Organics grows green beans (and sometimes yellow wax beans) throughout the summer season. Crisp, slender, and sweet when fresh-picked, they’re one of the most versatile vegetables in the summer box.

  • Refrigerate unwashed in a produce bag or container.
  • Use within 4–5 days for best snap and flavour.

Rinse under cold water. Snap or trim off the stem end — the tip end can stay. Leave whole or cut to length as needed.

  • Blanched and buttered — boil 3–4 minutes until bright green and just tender, toss with butter and flaky salt.
  • Roasted — toss with oil and roast at 425°F for 12–15 minutes until blistered.
  • Stir-fried — cook over high heat with garlic and sesame oil for a fast side dish.

Green bean salad — blanch, cool, and toss with Dijon vinaigrette, shallots, and toasted almonds.
