Section titled “🥒 Zucchini Fritters”This week’s box is practically a fritter kit. Zucchini is the base, but it’s the dill, scallions, and green garlic that make them taste unmistakably like mid-summer. Grate the zucchini, salt and squeeze out the excess moisture, then fold in chopped dill, sliced scallions, and minced green garlic before pan-frying until golden. Simple, satisfying, and a great way to use several things at once.
Serve the fritters with this quick homemade tartar sauce for the classic pairing. The dill from your CSA box works beautifully in the sauce.
Use These First
Section titled “Use These First”These are the most time-sensitive items in the bin — plan to use them within the first few days.

| 🧄 Green Garlic | Mellow and fresh — use this week while it’s at its most delicate. Use both the white bulb and the green tops. |
Mid-Week
Section titled “Mid-Week”These hold a few more days but are best used before the end of the week.

Storage Tips
Section titled “Storage Tips”First step: remove the tops
Section titled “First step: remove the tops”For hakurei turnips — remove the greens as soon as you get home. The leaves keep pulling moisture from the roots, and separating them helps the roots stay firm much longer. Store tops separately — they’re edible.
Item-by-item notes
Section titled “Item-by-item notes”- Spinach — refrigerate in a sealed bag with a paper towel to absorb moisture. Turn the bag over once or twice so one side doesn’t stay too wet.
- Lebanese Cucumbers — store in the crisper drawer. Use within 4–5 days for best crunch.
- Dill — trim the stems and stand upright in a small glass of water in the fridge, loosely covered. Use within 4–5 days.
- Green Garlic — refrigerate loosely wrapped in a damp paper towel. Use both the white bulb and the green tops.
- Sugar Snap Peas — store in a produce bag in the crisper drawer. Best within 3–5 days.
- Scallions — stand upright in a glass with a little water, or wrap in a damp paper towel in the crisper.
- Zucchini — store in a cool place or the crisper drawer. Use mid-week before the skin softens.
- Fennel — separate the fronds from the bulb right away. Store fronds loosely in a bag; store the bulb in the crisper. Use fronds within 2–3 days.
- Magenta Lettuce — keep refrigerated in a produce bag or airtight container with a paper towel. Best enjoyed within the first few days.
- Hakurei Salad Turnips — remove tops right away. Store roots in the crisper drawer. The greens are edible and cook like spinach.
Recipe Ideas

Section titled “Quick Wins”Sugar Snap Peas Raw — No prep needed. Eat straight from the bag as a snack, or arrange on a plate with hummus and sliced cucumbers. Crisp, sweet, and ready in seconds.
Magenta Lettuce Salad — The beautiful burgundy leaves are tender and mild. Toss with cucumbers, dill, scallions, and a simple lemon vinaigrette.
Asian Cucumber Salad — A cool, refreshing cucumber salad with rice vinegar, sesame, ginger, garlic, scallions, and a touch of heat. The Lebanese cucumbers and scallions from this week’s bin are perfect for it. 10 min · External
Main Meals
Section titled “Main Meals”Zucchini Fritters — Grate zucchini, salt and squeeze out the moisture, then fold in dill, scallions, and green garlic before pan-frying until golden. The four ingredients together taste like a whole summer in one bite. 30 min · External
Spinach & Fennel Sauté — Heat olive oil in a wide pan. Add thinly sliced fennel and cook until just softened, about 5 minutes. Add spinach in handfuls and stir until wilted. Finish with a squeeze of lemon and flaky salt. Great alongside grilled fish or as a light side. 15 min
Roasted Fennel & Hakurei Turnips — Halve the fennel bulb and quarter the turnips. Toss with olive oil, salt, and a pinch of sugar. Roast at 425°F / 220°C until caramelized, about 25–30 minutes. 30–35 min
Sugar Snap Peas with Sesame & Green Garlic — Blanch peas for 60 seconds, drain, and toss with sesame oil, toasted sesame seeds, and thinly sliced green garlic. A simple side that takes five minutes. 10 min
Make Ahead
Section titled “Make Ahead”Scallion Pancakes — Classic flatbread made with a simple dough and sliced scallions, pan-fried until golden and flaky. Great as a snack, side, or wrapper for leftovers. 45 min
Tzatziki — Grate Lebanese cucumbers and squeeze dry, then fold into Greek yogurt with minced green garlic, chopped dill, lemon juice, and olive oil. Serve with sugar snap peas, sliced cucumbers, or pita. Keeps 4 days in the fridge. 15 min
