UNBOXING Week 4 Unboxing — July 2 & 4, 2026

Your bin includes garlic scapes and basil — everything you need for a batch of garlic scape pesto.

Make it as soon as you can while the scapes are still firm and the basil is fragrant. It comes together in about 15 minutes: blend scapes, basil, nuts, parmesan, olive oil, and lemon juice until smooth. Use it on pasta, drizzle over grilled summer squash, spread on toast, or stir into soups. Freeze extras in ice cube trays — each cube is about 2 tablespoons and keeps six months.

These are the most time-sensitive items in the bin — plan to use them within the first few days.

These hold a few more days but are best used before the end of the week.

💚 KohlrabiStays crunchy for quite a while in the fridge. Peel first — the skin can be tough. Raw sticks, slaw, or roasted cubes.

Most of this week’s vegetables belong in the crisper drawer on the high-humidity or vegetable setting:

  • Cucumbers — fridge crisper; use within several days for best crunch.
  • Gourmet Lettuce Mix — refrigerate in a bag; use early. Add a paper towel if there is moisture in the bag.
  • Radishes — remove tops if attached. Store roots in the crisper drawer in a bag.
  • Rainbow Swiss Chard — crisper drawer in a loosely closed bag. Cook stems first — they need a few extra minutes.
  • Garlic Scapes — store in the crisper, or trim ends and stand upright in a glass of water in the fridge.
  • Basil — storage depends on whether it arrives as cut stems or a potted plant. Cut stems: trim and stand in a glass of water, loosely covered, out of the fridge. Potted: keep on a windowsill and water when soil feels dry.
  • Summer Squash — fridge crisper; use mid-week. Skin is more delicate than winter squash.
  • Kohlrabi — remove leaves if attached. Store bulb in the crisper drawer. Leaves are edible — cook like greens.
  • Eclipse Onions — fridge crisper; use like scallions or mild fresh onions.
  • Sugar Snap Peas — fridge crisper; best fresh within 3–5 days.

Raw Crunch Plate — Cucumber coins, kohlrabi sticks, sugar snap peas, and radishes arranged with hummus or your favourite dip. No cooking needed. A good kid-friendly snack plate. 5 min

Quick-Pickled Cucumbers and Radishes — Slice cucumbers and radishes, toss with vinegar, salt, and a pinch of sugar. Ready in 20–30 minutes. Great alongside grilled proteins, rice bowls, or in wraps. 10 min active

Asian Cucumber Salad — A cool, refreshing cucumber salad with rice vinegar, sesame, ginger, garlic, scallions, and a touch of heat. Works especially well with this week’s cucumbers, scallions, and garlic scapes. 10 min · External

Garlic Scape Pesto Pasta — Make the pesto kit into a full batch, then toss hot pasta with a few generous spoonfuls and a splash of pasta water to loosen. Wilt a handful of Swiss chard leaves in the same pan and toss in. Finish with parmesan. 25 min

Rainbow Chard Sauté — Heat olive oil in a wide pan over medium heat. Add chopped Eclipse Onions and cook 2 minutes. Add chard stems and cook 3 minutes more. Add the leaves and a pinch of salt; stir until wilted. A drizzle of garlic scape pesto makes it excellent. 15 min

Summer Squash with Garlic Scape Pesto — Grill or roast summer squash slices until tender, then drizzle with garlic scape pesto while still warm. 15–20 min

Kohlrabi Slaw — Peel and shred kohlrabi, toss with shredded radishes and Eclipse Onions, and dress with lemon juice and olive oil. Light, crunchy, and good alongside grilled anything. 15 min

Garlic Scape Pesto — Make a full batch and freeze in ice cube trays. Drop frozen cubes directly into hot pasta or soup. Keeps up to 6 months in the freezer. 15 min
