Basil

Fresh basil is one of the most aromatic herbs in the summer CSA box at Cold Springs Organics. Bright green leaves with a sweet, slightly peppery fragrance, it’s at its best from midsummer through early fall when the weather is warm.

  • Keep stems in a glass of water on the counter (not the fridge — cold turns it black).
  • Cover loosely with a plastic bag.
  • Use within 5–7 days.

Pinch leaves from stems just before using. Tear rather than chop to minimize bruising and browning.

  • Caprese — layer with ripe tomato and fresh mozzarella, drizzle with olive oil.
  • Pasta sauce — blend into a fresh tomato sauce just before serving.
  • Compound butter — mix chopped basil into softened butter for a finishing touch on grilled vegetables or bread.

Tomato basil bruschetta — dice ripe tomato with torn basil, olive oil, and a pinch of salt; spoon over toasted bread.
