Tear, don't cut torn edges stay fresher longer

Lettuce is one of the most consistent crops in the Cold Springs Organics CSA box, grown in both spring and fall when cool temperatures produce the sweetest, most tender leaves. The farm grows a range of varieties — loose-leaf, butterhead, and romaine — all mild, crisp, and best eaten fresh within a few days of harvest. Butterhead types are especially delicate; romaine holds up longer and tolerates brief grilling.

Refrigerate in a loosely sealed bag or container with a dry paper towel to absorb excess moisture. Keep whole heads intact as long as possible — separated leaves deteriorate faster. Use within 5–7 days; butterhead and loose-leaf varieties are more delicate than romaine and should be used in the first few days.

Separate leaves from the core and discard any bruised or slimy outer leaves. Rinse in a large bowl of cold water and lift the leaves out, leaving any grit behind. Spin or pat dry thoroughly — wet lettuce dilutes dressing and wilts faster once dressed. Tear larger leaves into pieces by hand rather than cutting with a knife; torn edges stay fresher longer and don’t brown.

  • Green salad — toss dry lettuce with your favourite vinaigrette just before serving. Add toppings like radishes, cucumber, sunflower seeds, or cheese.
  • Lettuce wraps — use large whole leaves of butterhead or romaine as a fresh wrap for stir-fry, bean, or grain fillings. Butterhead cups hold their shape well.
  • Grilled romaine — halve romaine heads lengthwise, brush the cut side with oil, and grill cut-side down over high heat for 2–3 minutes until lightly charred. Dress with Caesar dressing and shaved parmesan.

Simple farm salad — rinse and dry lettuce leaves and arrange in a wide bowl. Drizzle with olive oil and a squeeze of lemon juice, add a pinch of flaky salt, and toss gently. Scatter over whatever is on hand — thinly sliced radishes, a few cherry tomatoes, pumpkin seeds, or crumbled cheese. Eat immediately after dressing.
