Tomatoes are a warm-season staple and the heart of our summer harvest. Cold Springs Organics grows several heirloom and hybrid varieties, from cherry tomatoes to large beefsteaks.

  • Store ripe tomatoes at room temperature, never in the refrigerator — cold kills their flavor.
  • Keep stem-side down to slow moisture loss.
  • Use within 5–7 days of peak ripeness.
  • For longer storage, freeze whole or roast and freeze in portions.
  • Caprese salad — layer with fresh mozzarella, basil, and a drizzle of olive oil.
  • Slow-roasted tomatoes — roast at 275°F for 2 hours to concentrate flavor.
  • Fresh tomato sauce — simmer with garlic, olive oil, and fresh basil.
  • BLT sandwich — a summer classic with farm-fresh slicing tomatoes.
