Kale is a hardy cool-season green that thrives in Cold Springs’ climate. It is one of the few crops we harvest nearly year-round, and its flavor actually improves after a frost.

  • Refrigerate unwashed kale wrapped loosely in a damp paper towel.
  • Use within 5–7 days for best texture and flavor.
  • Blanch and freeze for longer storage — great for soups and smoothies.
  • Kale chips — toss with olive oil and salt; bake at 300°F until crisp.
  • Kale salad — massage with lemon juice and olive oil to soften; top with nuts and cheese.
  • Sautéed kale — cook with garlic and a splash of broth or white wine.
  • Green smoothie — blend with banana, apple, and ginger.
