Carrots are a cool-season root vegetable and one of our most popular crops at Cold Springs Organics. They thrive in loose, deep soil and can be harvested from late spring through fall.

  • Store unwashed carrots in the refrigerator crisper drawer.
  • Remove green tops before storing — they draw moisture from the root.
  • Carrots keep for 2–4 weeks when stored properly.
  • For long-term storage, pack in damp sand in a cool root cellar.
  • Roasted carrots — toss with olive oil, honey, and thyme; roast at 400°F for 25 minutes.
  • Carrot soup — simmer with ginger, coconut milk, and garlic.
  • Raw snacks — serve with hummus or dip for a simple farm-fresh snack.
  • Pickled carrots — quick-pickle with vinegar, sugar, and spices for a tangy condiment.
