Spring at Cold Springs Organics
Section titled “Spring at Cold Springs Organics”Spring is our season of renewal. As the ground thaws and days lengthen, the farm comes alive with cool-season crops that have overwintered or been started early in our greenhouse.
What’s in Season
Section titled “What’s in Season”- Kale — early spring harvest, sweet after frost
- Spinach — tender spring leaves, best raw or lightly wilted
- Radishes — fast-growing, first roots of the season
- Green onions — mild and fresh, ready before the summer alliums
- Peas — snap and shell varieties, a spring highlight
Tips for Spring CSA Members
Section titled “Tips for Spring CSA Members”- Spring shares tend to be lighter in volume but high in quality.
- Store greens promptly — spring produce is tender and wilts quickly.
- Look for the first strawberries in late spring, weather permitting.
